How to make a three course meal: Peppered snails, coconut rice with mango and cashew salad.


What is a three course meal? A three course meal is a meal consisting of three servings of food, first being the Appetizer and then the entrée also known as the main course and lastly the dessert.


Appetizer: A small dish of food or a drink taken before a meal /the main course of a meal to stimulate one's appetite.


Entrée: A dish served as the main course of a meal. Usually larger than the appetizer and dessert.


Dessert: The sweet course eaten at the end of a meal. Usually a snack.


For the three course meal the appetizer will be: peppered snails, the entrée: coconut rice and grilled chicken with a dessert of fruit salad.



How to make peppered snails.

Peppered Snails are a common feature in Nigerian restaurants' menus. They are also served as Small Chops/Appetizers at parties.



Prep: Before you make Peppered Snails



Break the shells of the snails and clean the snail slime.


Once you clean your snails properly be it by alum or salt you are good to go.



Ingredients for Peppered Snails

10 medium snails

4 habanero peppers (or to your taste)

5 plum tomatoes

1 onion

1 big stock cube

1 cooking spoon vegetable oil

Salt (to taste)


For serving:

1 onion

Tool you'll need:


Toothpicks for serving.


Notes about the ingredients


Be careful about the quantity of seasoning you add to snails. They can easily get over-seasoned and taste salty due to the texture of the meat, it does not absorb much of the seasoning.



Making the Peppered Snails


Put the cleaned snails in a pot and pour water to cover them.


Add the stock cube and the chunks of onion. I use chunks of onion when I want to season with onions without having pieces of onions in what I am cooking.
Cover and start cooking on medium heat. While cooking, top up the water when necessary so it does not burn.



Put the sliced tomatoes, pepper and onions in another pot and start cooking on medium heat. The aim is to steam them till they are soft. Stir from time to time so it does not burn.



After 30 minutes, the snails should be well cooked. Remember to top up the water as you cook them. Note that the tongue of the snails are still crunchy even when the snails are done.



Remove the chunks of onion from the snails. Increase the heat to high and stir constantly till all the remaining liquid in the pot is absorbed. You don't want to lose any flavour by pouring away the snail stock. Set it aside.



When the water dries from the pepper, tomatoes and onions, add the vegetable oil and fry for about 5 minutes. Stir continuously so it does not stick to the pot.



Add salt and stir very well.



Add the cooked snail. Stir very well and add more salt if necessary.



That's it! Leave to cool down a bit, insert toothpicks and serve with onions.



Making the coconut rice.



Coconut rice is a rice dish eaten and enjoyed all over the world it has a unique taste because it is cooked and infused with the flavor of coconut essence.




1 tablespoon Virgin coconut oil

¼ cup red onion (chopped)

2 cups coconut milk

2 cubes maggi

½ teaspoon (cumin, dried pepper, curry)

1 teaspoon salt

3½ cups rice (washed) 




Place a large pot (with a good fitting lid) on medium heat.


add in the coconut oil, wait 2mins, then add in the chopped onions.



Sauté until the onion becomes translucent (3-4mins)



Now add in the coconut milk, 2 cups water, Maggi, spices and salt.


Cover the pot, increase the heat to high and bring the mixture to a boil.



Reduce the heat to low-medium (2.5 – 3 on numbered cooker), add in the rice, and stir.


Cover the pot tightly and leave the rice to cook for 25mins.
Serve and Enjoy!




Do not open the lid while the rice is cooking, do not stir the rice at any time during cooking.


To add color garnish it with green peppers and carrot shavings (optional)



Making the fruit salad. (Mango Cashew Salad).



Fruit salad is a dish consisting of various kinds of fruit.



1 Mango - peeled and diced.

1 Apple – peeled and diced.

1 Banana – peeled and diced.

1 Orange – peeled and diced and seeded.

1 Avocado –peeled and diced.

1 Small Pawpaw – peeled and diced.

1/2 watermelon –peeled and diced.


A cup of toasted cashews

1 tablespoon lime juice.

½ tablespoon of sugar (optional)




Pour all ingredients in bowl.

In the bowl, toss together all ingredients. Put in fridge to chill for 30 minutes before serving.



If you are allergic to cashew or do not like nuts in your fruit salad you can exclude it. Without the cashew nuts it till makes a delicious fruit salad.

Be creative you can add more fruits or reduce the ones on the ingredients list to better suit you.
